Diabetes-Friendly Recipe: Asian Roast Pork Sliders
Serves 6; Serving size: 1 slider
1 1/2 pounds coarsely ground pork (96% lean)
1-inch piece ginger, finely grated
1 large garlic clove, peeled and finely grated
1 scallion, trimmed and minced
2 tablespoons light soy sauce
2 teaspoons dark sesame oil
1 teaspoon tapioca starch or cornstarch
6 whole-wheat hamburger buns
In a medium bowl, mix together the pork, ginger, garlic, scallion, soy sauce, sesame oil, and tapioca starch. Shape into 6 individual patties.
In a dry nonstick skillet over medium heat, cook the pork patties to medium doneness and golden on both sides, about 7 minutes total. Serve on whole-wheat bun, topped with coleslaw and sriracha, if desired.
