Yummy! Diabetes-Friendly Ginger Spice Cookies

I have a friend who refers to the entire month of December as “Christmas Cookie Season.” For her, the best thing about the holidays is the presence of delicious cookies. Oatmeal raisin, chocolate chip, sugar, it doesn’t really matter. As long as it’s a cookie and it’s tasty, it’s perfect for “Christmas Cookie Season.”

However, I’m pretty sure these would be a little extra special. Not only do they take advantage of some traditional holiday spices, they’re diabetes-friendly, which means indulging in a few comes with a lot less guilt!

Tova’s recipe for ginger spice cookies contain only 61 calories per cookie, 11 grams of carbohydrates (moderation is still important here), and 2 grams of fat. Take a look, and let us know what you think in the comments below!
