For as long as we can remember, we’ve been told to eat our veggies. We get it. We know they’re important. Fundamental to a well balanced diet, and essential to weight management. If you have diabetes, this has probably been reinforced for you more than most.
Because not only are they an vital source of the vitamins and minerals you need to stay healthy, they’re also really great at helping maintain balanced glucose levels.
But if you don’t love vegetables, they can get really boring, really fast.
But they don’t have to! What’s better? They’re all non-starchy vegetables, which are ideal for people with diabetes.
Personally, I can’t wait to try the Gazpacho. Take a look, and make sure to let us know which healthy dish you’re most excited for!
