When I think of Thanksgiving, I think of family, friends, turkey, and of course, pumpkin pie!
Well, and maybe football, too.
Or maybe the order looks more like: pumpkin pie, family, friends, turkey, and football. Pumpkin pie is pretty delicious…
While we often feel like there are certain foods that are “off-limits,” Thanksgiving is a day I try to allow myself to splurge a little, so I was pleased to find this delicious recipe for a vegan pumpkin pie that is made with silken tofu (which is, incidentally, loaded with protein) and stevia for sweetening. It sounds a little different than recipes I’ve tried before, so I’m excited to try it out and see how it compares to the original recipe!
Added bonus: pumpkin is high in fiber and beta-carotene.
